Ever since the Famous Feta Pasta recipe came out I have been hooked. I recently found my perfect spin on it and wanted to share.

- Ingredients:
- 1 pack of boneless chicken breast
- 1 box of Gluten Free Penne * I use Barilla, also note you can swap for regular pasta
- 1 block of Feta
- 2 boxes of grape tomatoes
- Garlic
- Crushed Red Peppers
- Onion Power
- Salt
- Pepper
- Oregano
- Olive Oil
- Lemon
- Adobo
How to Make:

- Preheat your oven to 400 degrees
- Boil water in a pot for your pasta and a dash of salt
- Put your block of cheese in a baking dish tray
- Surrounding the cheese place your washed spinach and cherry tomatoes
- Mince half of a garlic and put it on top of your spinach and tomatoes
- Add salt, crushed red pepper, oregano, and onion powder to taste
- Drizzle olive oil on top of your spinach, tomatoes, and cheese
- Once your oven is heated place the tray in the oven for 20 minutes
- Clean your chicken and place it in a bowl to start marinating
- Add the juice of a whole lemon to your chicken
- Use the other half of the garlic and mince onto your chicken
- Add salt, pepper, adobo, and crushed red pepper to your chicken
- Once the water in your pot is boiling add in your pasta while stirring occasionally
I cook the gluten-free Brailla for about 11 minutes, after 11 minutes I drain and rinse with cold water and place it back on the stovetop without heat - Cook the chicken on your stovetop under medium heat, about 5-8 minutes per side
- Once the 20 minutes are up on the tray in the oven I take it out and squish the tomatoes *beware the juice of the tomatoes can spray and it is very hot*
- Once the tomatoes are squished I mix the spinach, tomatoes, and cheese together
- Then shred the chicken into little pieces with two forks
- Add the spinach mixture into the pot with pasta and then add the chicken on top
- Mix it all together and enjoy!
