Easy Salmon Bowls for Dinner

Ingredients

  • Salmon Fillet
  • Olive oil
  • Pepper
  • Lemon
  • Sticky rice
  • Sriracha
  • Soy Sauce ( I use gluten free)
  • Kewpie Mayo
  • Sesame oil
  • Salt
  • Pepper
  • Yellow radish
  • White radish
  • Cucumbers
  • Red Pepper
  • Sugar
  • Apple Vinegar

Instructions

Preheat oven to 400

Cook sticky rice, I use a rice cooker and used about 1.5 cups to have leftover rice for the next day.

Start to season your salmon. Drizzle on olive oil, I used a whole lemon, and pepper to taste.

When the oven is fully heated place the salmon in the oven for roughly 17 minutes total. Be sure to flip at it 8.5 minutes in.

Cut your yellow radish into 1/4s

Start prepping the spicy cucumbers:

Slice half of cucumber, I like to slice the cucumbers on each side, once I get close to the center I stop cutting and go to the other side. Leaving the center where the seeds are, untouched.

Place cucumbers in a bowl

Add 1 teaspoon salt

Add 1 teaspoon sugar

Add 1 tablespoon apple vinegar

Add 1 tablespoon crushed red pepper (add less if you would like less spicy)

Mix the ingredients and let sit

Begin prepping the Spicy Mayo

4 tablespoons of Kewpie Mayo

.5 teaspoon of sesame oil

3 or 4 tablespoons of Sirracha (depending on your spice level, add less sriracha and taste test if you do not like spicy)

.5 tablespoon of Soy Sauce

Dash of Salt and Pepper

Once the salmon** is done start plating. I find it easier to do this in a bowl. Add your rice, add your white radish, yellow radish to the sides of the bowl. Take your cucumber and place in the sides of the bowl (there will be leftover liquid in the original bowl, just leave it). Add your Salmon to the middle then take a spoon and drizzle your sauce over the bowl.

You can top the bowl with chopped seaweed for extra garnishing.

I truly love making this bowl it’s on repeat in my house all the time, it is so filling, has a nice crunch, and has a bit of spice.
